Trio in Cottonwood

Stuart and the crew were in town and we were desperate for dinner in a private room somewhere, anywhere in Salt Lake. Quick thinking, we pulled into Trio Cafe in Cottonwood where it is always packed with families and working people in business casual. This location has a spectacular outdoor patio and spacious interior compared to the Trio at 9th Street. Let's start off with some cappuccinos...
Grilled Artichoke, $9.  Tomato-mozzarella crostini, lemon aioli, balsamic reduction. This was good, but not mind-blowing. Colors were too muted and distracting!
Rosemary Flatbread, $8.50.  Goat Cheese, roasted peppers, caramelized onions, tomatoes. A classic favorite. Beautiful blend of flavors with the balsamic drizzle.
Manila Clams, $12.  Pesto, tomatoes, white wine and butter, grilled ciabatta. There was way too much pesto and it clouded the juicy sweet flavor of clams. The fat juicy lemon helped a bit.
Skirt Steak, Shrimp, Risotto, $32.  I was starting to panic until this Special arrived. This dish alone redeemed the entire meal! Brilliant melody of flavors, fresh herbs, roasted garlic, olives. Textures of plump juicy perfectly cooked shrimp (not overcooked and rubbery) next to marinated steak medium rare and chunky creamy risotto. Fabulous. Loved every drip of this.
Fettucini with Seafood in Tomato Sauce, $32.  This was another Special I think. The tiny shrimp did not look appetizing (next to my monster prawns) and the green basil was not very green. Hubby said it was so-so ;'(
Trio Chocolate Torta, $5.99.  Marcona almond crust, orange-mascarpone whipped cream. Rich and yummy, but I am not a dessert girl.
Trio of Desserts, $5.99.  Nothing beats good old fashioned ice-cream.

High West lunch menu

After an awesome bike ride, we headed to High West to see what it would be like during daylight. Gorgeous! Natural light flooded through all the windows in the big room showcasing the wooden barrel details of the high-end cowboy finish inside. Double date lunch with our fave peeps, Laurie and Patrick.
Okay, let's start off with some drinks, y'all...
House Made Sour Dough Pretzel, $6. Creamy dijon rye sauce, house cured pickles. This will have been the BEST pretzel of your life. No kidding.
Gazpacho with Lump Crab.  This cold raw veggie soup was spiced and chilled to glorious perfection, seriously. Chunks of meaty briny white crab. Chef James, you rock.
Even with a view of bikers and hikers taking the Main St lift up to Park City Mt Resort.
Sauteed Spinach & Tuscan Kale, $6.  With fresh grated ginger and maple syrup. Simple and brilliant.
High West Burger, $16.  House ground Niman Ranch Farms beef, Rolling Hills Ranch Bison, a proprietary secret flavoring, caramelized whiskey onions, house cheese blend (Gruyere & Blue), Fried Shallots, Served on house made caraway brioche roll, house cured pickles & fries. Sensational BURGER! Juicy, meaty, medium rare, incredible flavors...
Bacon Wrapped Delta Blue Shrimp, $14.  Grilled with our BBQ sauce, mango habanero salsa. Hands down, everyone's ultimate fave. If you have no religious dietary restrictions, get a few of these for the table!
Whiskey Cider Braised Short Ribs, $15.  Mashed Yukon gold potatoes, fried shallot rings. Ridiculous. After a killer ride, hike, whatever, this is how you feast ;')
A little sip of this...

Wahso summer nights

Another yummy Wahso summer night of uber fusion dishes... We started out on the deck and relocated inside when the sun left and chill kicked in. Scenic seats on the deck are magical. Come with friends you LOVE :)
$5 corkage.
Shrimp Masala.  Chili seared shrimp, caramelized pineapple, red onion, mango, avocado, cilantro coulis. Sweet, sour, spicy, crunchy, smooth, slippery. This app hits all the sensations. I'm not a lover of masala, thus I enjoyed the fruit more than the actual shrimp.
Edamame.  Served steamed and tossed in Old Bay, sea salt and meyer lemon confit. You will suck these rinds forever. Flavors are addicting! Get this for the table!
Freebie wonton chips. Be careful...
Before the entrees came out, we migrated inside to a cozy 4-seater booth.
Sweet Corn with Miso.  Served with bits of salty crunchy bacon. Simple and so fabulous.
Pork Postickers.  Pickled cucumbers, balsamic-soy dipping sauce. Not my favorite. Too sticky, too hard, too  fried. FYI, very spicy.
Blistered Green Beans.  We always get it with sauce on the side. Can't ever go wrong with these. These green beans are equivalent to a box of french-fries. Super YUM.
Sweet Miso Glazed Alaskan Cod.  This is a dish people CRAVE. It's that good. Served with sushi rice, shitakes, bok choy and a yuzu-soy sauce containing bits of lemongrass. Buttery wet cod served with all the right Asian fixings...
Malaysian Style Red Snapper.  White prawns, wok tossed summer veggies, green papaya cashew salad. Fresh, light and gorgeous. Ripe mango, mint, sprouts, scallion, lotus...
Lamb Vindaloo.  Grilled Rocky Mt Sirloin, black eyed peas, cucumber, sweet and sour eggplant. I love the natural flavors of lamb. Lamb was cooked perfectly, but the sauce was overpowering.
Grilled Filet Mignon.  Sweet onion tempura, glazed baby veggies, wahso steak sauce, ponzu brown butter. AMAZING. Onion rings are the bomb.
