St. Regis Wine Room in Park City, Utah



We were due at the St. Regis for a private wine pairing with our favorite wine lovers Lea and Barry. If you don't own real estate at the St. Regis Hotel, the only way to get there is by funicular from the base valet on Deer Valley Drive. At 8pm we were still taking in the bright lit magic of Park City summer nights!
At the top we found the secret Wine Room, flutes of bubbly champagne, happy kisses and warm hugs :)
Table filled with polished wine glasses and untraditional floral arrangements in test tubesgeometric, colorful and pretty!
Our Sommelier, in pure poetry, introduced the thoughtful pairings before each course. Amuse bouche commences our feast of tipsy delicious education.
Amuse: Farm Egg with Caviar and Creme Fraich.  The delicate eggshell seems to be the preferred choice in portion controlled Euro amuse vessels these days. Top off everything with explicit caviar please!
Wine: Nicolas Feuillatte Epernay Brut MV.   
First:  Tuna Sashimi with Mint and Soy-Ginger.  Tuna bites were chilled spiced minty gingery kicky explosions. Loved every drip of this.
Wine:  Vina Godeval Valdeorras Godello 2007 
Second:  Wagyu Beef and Truffle and Bitter Greens.  Decadent truffled razor-thin wagyu and seasoned frisee. Then a bite with the grilled buttery garlicky herby toastare you kidding me?! One of my favorite preparations for wagyu.
Wine:  Honig Napa Valley Sauvignon Blanc 2010 
Third:  Snapper with Market Spinach and Herbal Broth.  Snapper fillet was seared perfectly with a flaky center but flavors were too subtle and not as interesting as the tuna and wagyu. It was the most incredible sip of pinot noir ever though!
Wine: Migration Anderson Valley Pinot Noir 2007
Fourth:  Rack of Local Lamb with Sherry Glaze, Fresh Peas, Carrots.  Gorgeous piece of lamb cooked and seasoned perfectly medium rare with the ideal amount of fatty trim. Again, perfect wine pairing.
Wine:  Elderton Barossa Valley Shiraz 2006 
Fifth:  Bear Lake Raspberry with Raspberry Consomme, Yogurt Ice Cream.  I am a huge fan of Asian tart yogurt. Bright red dessert paired with bright red dessert wine! Beautiful refreshing finale.
Wine:  Banfi' Rosa Regale' Brachetto d Acqui MV 
Another dreamy summer night in PC. Brilliant friends, significant conversation, delicious bites, exquisite wines. Dishes were not wildly adventurous, but safe, solid, excellent courses prepared with attention and detail. Incredible wines. Gorgeous room. Exceptional service.
